Abstract: The article provides information on climate variability, ecological factors, and the positive effect of the artichoke plant on human health in the Absheron peninsula. In modern times, as a result of climate changes, the increase of heat and light, carbon dioxide (CO2) in atmospheric air from environmental factors has reached its natural amount from 0.03% to 0.042%, and the temperature of our planet has increased significantly. This increase, as in all other geographical areas, the average annual temperature on the Absheron Peninsula has increased to +4 - +5oC. In Absheron, illumination is relatively high, temperature and relative humidity are very low. Natural water here (sea water and well water). The atmospheric air of the area is very mixed, and the amount of oxygen in large industrial cities is 18.0 and 18.4%, which is much lower than the norm. Climate changes affect plants as well as all living things. Therefore, their protection should be considered one of the main research priorities. Quality nutrition is the main condition for a healthy future of the human population. It is very beneficial to use vegetables in a healthy diet. Artichoke plant is very rich in vitamins, minerals and antioxidants. Wider cultivation and use of this plant in our republic, detailed study on a scientific basis is appropriate.
